Citrus Chicken

Last night I remade the chicken breast recipe that I shared a short while ago (Chicken Breast with Kiwifruit). I made some changes and have renamed the recipe Citrus Chicken. It turned out really good.

Ingredients:
6 boneless skinless chicken breasts
6 green onions – chopped
2 cloves garlic – minced
2 TBS light olive oil
½ teaspoon paprika
Salt and pepper to taste

In a large skillet, heat olive oil and stir fry green onions and garlic for one minute. Add chicken (3 at a time) and sprinkle with paprika, salt and pepper. Sear both sides. Remove from heat, place on broiler pan and broil (on low) turning once until chicken is cooked through – about seven minutes on each side.

Sauce:
2 lemons – washed and dried
2 oranges – washed and dried
2 TBS butter
2 TBS sugar
¼ teaspoon cayenne pepper
¼ teaspoon salt

Zest the rind of one lemon and one orange. Juice the lemons and oranges into a small bowl. Heat butter in a small saucepan and add sugar. Stir until sugar and butter are melted and sugar begins to caramelize (begins to darken). Add orange and lemon juice and zest. Mixture will chunk up; stir until smooth. Boil and stir the sauce until it reaches the thickness you want. Stir in the salt and cayenne pepper.

Slice chicken into strips and pour sauce over chicken. Serve.

This recipe will make it into our dinner rotation.
