Kitchen Sink Cookies

A year or so ago, I went to an estate sale and bought three old cookbooks for 50 cents each. I have found some amazing recipes inside with many more that I want to try.

This cookie recipe makes a ton of cookies; I usually freeze half of them to eat later.

Kitchen Sink Cookies
2 ½ cubes butter or margarine - softened
2 cups sugar
2 cups brown sugar
4 eggs
3 teaspoons vanilla

4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking power

2 cups oatmeal
2 cups coconut
2 cups crushed corn flakes
12 ounces chocolate chips (or more if you like a lot of chips)

Preheat oven to 350 degrees.

Cream butter and sugars.

Add eggs and vanilla and mix well.
This is when the ingredients start to look creamy to me:

Stir together flour, salt, baking soda, and baking powder.

Add to creamed ingredients and mix well. Stir in oatmeal, coconut, corn flakes, and chocolate chips. This part is a workout - in a perfect world the energy expended by hand stirring would equal or exceed the calories of consuming them.

Drop by spoonfuls onto an ungreased baking sheet.

Bake for 15 minutes. Remove from oven. Cool five minutes before removing them from the baking sheet. These cookies freeze well which is good because if they weren't in the freezer, I'd keep eating them. I think I'll go grab a bag now.

Yes! My mother used to make these. They are sooooooooo yummy. And they're even excellent right out of the freezer.
